Goat cheese, often called by its French name, chèvre, is any cheese made entirely from goat’s milk. Goat milk is low in casein, a milk protein that curdles, so it produces a very small, soft curds that crumble easily.
A whole month dedicated to the creamy, tarty, deliciousness that is goat cheese. Use goat cheese as a topping for pizza. Pour some marmalade or jam over it and use as a spread for crackers. Goat cheese even works wonders for salads!
