Sweetened pastries are often described as bakers’ confectionery. The word “pastries” suggests many kinds of baked products made from ingredients such as flour, sugar, milk, butter, shortening, baking powder, and eggs. Small tarts and other sweet baked products are called pastries.
Sweet pastry differs from a traditional shortcrust in that the softened butter is creamed with sugar before adding eggs and flour. This may seem counter-intuitive, especially if you’re used to making shortcrust which sees fridge-cold butter gently combined with flour to form a breadcrumb-like mixture.
